Of course when in Peru I’ll try to use coca leaves as much as I can because I’d like to take advantage of this ancestral plant. But in the US, I’ll replace it by mint, it’s just a very delicious and refresher herb. Plus it matches so good with pineapple. Also instead of pineapple I can do a strawberry sirop plus mint leaves or coca leaves. So yum!

I muddle a couple chunks of pineapple and use a 1:1 simple syrup instead of a gomme to lighten and dry out the cocktail.

I would add mint instead of Coca Leaves, i can make my own demarara syrup with Coconut juice since its a soft and a bit sweet flavor would be so good for trying it so far!
