I would choose the Cañete region of Lima. I would select it for the valley climate, for the relatively cool and cloudy winters and for its adjacency to the ocean. Because of its proximity to Lima, I would work hard to market the pisco to cocktail bars in the city, using that as a bit of a launching pad to push for export to cocktail-heavy cities in North and South America, the Caribbean, and Europe.

great! I would start producing Pisco at Cañete city (localted in Peru) in a massive production to make it bigger globally, the best drinking commerce is now starting at US! would be nice bring it up specially to Miami.
